A Comforting Thought

Blog 128 – Friday, May 8, 2009 A beautiful day – sunny in the upper 80’s.
Comfort food – a fare in our house about once a week – it offers me the luxury of "fixing and forgetting". A coarsely chopped onion, irregular cubes of potatoes, chicken broth, butter, half and half, a sprinkling of herbs and spices (some straight from my ever-growing garden) and a crockpot of potato soup is soon slowly steaming. Popping a small blackberry cobbler into the oven, I am out of the kitchen until dinner when, a quick, green salad is tossed and onto the table, along with freshly cubed, seedless watermelon and sliced strawberries. My mind wandering as it often does, I thank the Lord for my fully equipped kitchen – easy to maneuver and pleasant to occupy. End of the week – dinner planned and nearly done – I have the rest of the day to complete tasks on my list and prepare for the weekend – a comforting thought, indeed!
